WHAT IS QUARK?

Ciavarella Cristiano

Creamy like a yogurt, this cheese is ideal for those who play sports and for those who are attentive to the figure. It has less fat and calories and many valuable properties.

It has a thick, creamy texture similar to that of yogurt, but is actually a cheese. Thanks to its particular flavor, it is ideal as a substitute in both sweet and savory preparations. It is a fresh soft cheese obtained from the acid coagulation of goat’s milk.

It is produced from skimmed milk which is first pasteurized at high temperatures and then added with “good” bacteria and little rennet. It is then left to rest for about twenty hours to allow acidification and the formation of the curd.

After eliminating the whey by centrifugation or filtration, it can be enriched with cream in variable percentages, except in the case of lean quark where this step is missing.

Quark is low-calorie cheese: it contains about 70 calories per 100 grams. It is perfect for those on a diet or for those who do not want to give up the goodness of cheese, especially if you choose the version without cream.

From a nutritional point of view, it is also characterized by a good protein content (about 10 grams per hectogram) and a reduced carbohydrate and fat content for this reason it is an excellent ally of the line. In addition, it has a good satiating power.
The proteins it is rich in give satiety and help control hunger pangs.

It can be used, for example, to make soups or velvety creams more creamy.
It can also be spread on a slice of toasted rye bread or used to make light cheesecakes.
Finally, it is perfect for preparing a delicious spoon dessert: just put it in layers in a glass and add some fresh and dried fruit.
