Pea fusilli with smoked salmon, avocado and pink pepper

Ingredients for 2 people:

165g of fresh pea pasta
100g of smoked salmon
1/2 avocado
2 tablespoons of pickled pink pepper
lime juice
extra virgin olive oil
salt

Boil the pasta in abundant salted boiling water.


Meanwhile, cut the salmon into strips and the avocado into cubes.


Combine both ingredients in a bowl and season them with a splash of lime juice, salt, a drop of extra virgin olive oil and a pinch of salt.

Drain the pasta al dente, transfer it to the bowl with the cold sauce and mix everything well.
