Sailor’s cracker are the ancient bread of Genoese sailors, used in long crossings in the absence of fresh one. Traditionally, the sailor’s cracker was born in Camogli and in its vicinity, precisely in San Rocco.

Ingrediants:
500 gr. 0 or type 1 flour
250 gr. of water
2/3 gr. of brewer’s yeast

Dissolve the yeast in the warm water and after having dissolved it well, add the flour to form a firm dough.
Shape into a ball and let it rise in a bowl and cover with cling film.

Let it rise for 4/5 hours or when the dough is doubled.

Take the dough and form small balls of about 80 gr. each, they should come out 9. Arrange them on the work surface and cover to let rise for 1 hour.

Shape some scones with the help of a rolling pin and pass over each one the pasta hole wheel or the prongs of a fork.
Bake for about 20 minutes in a preheated oven at 220 degrees until they take on a golden color.
Now the biscuits are ready to be served.
